Gari Foto

Similar to couscous, Gari Foto is a Ghanaian delicacy which can be served as a main dish mixed with vegetables or an accompaniment for rice, beans or jollof.

Ingredients (Served as a main dish)

125ml - Vegetable Oil

100g - Gari

100g - Fresh tomatoes

25g - Tomato Paste

20g - Carrots

20g - Onions

20g - Green Pepper

15g - Homefoods Jollof Rice Seasoning

5g - Margarine

5g - Salt

5ml - Water

Method of Preparation:

1. Fry Onion in Homefoods Vegetable Oil.

2. Add Tomato Paste, chopped fresh Tomato and add Kpakposhito Blend (Chilli and Pepper)

3. Homefoods Jollof Rice Seasoning may be added to gravy to simmer for 10 minutes.

4. Mix Gari with Margarine in a bowl.

5. Sprinkle with Salt solution.

6. Add chopped Carrot, Onion and Green Pepper.

7. When the gravy is cold,skim the reddish oil on the surface of the gravy and add to Gari mixture.

8. Mix evenly and serve.

 

Gari Foto (served as an accompaniment)

Ingredients                                      

125ml - Homefoods Vegetable Oil                     

100g- Gari                                                

100g - Tomatoes (Fresh)                      

25g - Tomato Paste                                   

15g - Homefoods Jollof Rice Seasoning          

5g - Margarine                                           

5g - Salt                                                

5ml - Water                                                      

Method of Preparation:

1. Fry Onion in Homefoods Vegetable Oil.

2. Add Tomato Paste, chopped fresh Tomato and add Kpakposhito Blend (Chilli and Pepper)

3. You may add Homefoods Jollof Rice seasoning and water. Add to simmer for 10 minutes. Gravy is ready.

4. Sieve gari into desired microns and mix with margarine in a bowl with little water

5.Add salt to taste.

6. When gravy is cold, skim the reddish oil on surface of the gravy and add to Gari mixture.

7. Mix evenly and serve.

Ghana: Growing from a small palm oil exporter into a sizeable food business

Felicia Twumasi established Homefoods in 1995. The idea for a business had been brewing since she was at convent school. Initially, the company focused exclusively on the export of red palm oil, securing substantial market share through a partner in the UK under the Blue Bay label, but today it also produces a range spices and seasonings, sauces and local Ghanaian favourites such as gari. Jeanette Clark spoke to Felicia about putting a supply chain in place, export vs local markets and the grind to grow the company’s customer base.
